If Fast User Switching is enabled and there are other users logged on then multiple instances of explorer.exe are normal and necessary. In this case there will also be multiple instances of some other processes. With only one user there should be only one instance of explorer.exe. If more, this could be a sign of malware infection, in which case you should do a full scan with a good antivirus program.

Note that it is completely normal to have multiple instances of svchost.exe

If you have multiple users logged in, this is perfectly normal.
If you have "Launch folder windows in a separate process" enabled, this is perfectly normal.

If you want to remove "extra junk", download & install CCleaner-Slim, then use it regularly. Run the Cleaner & the Registry scan & remove everything they find. Then go to Tools > Startup & have a look at which programs load when your computer starts up. I'm sure you'll find a bunch of useless crap there.

Remember, there are very few programs that actually need to be loaded at startup....anti-virus & firewall are 2 examples. You do NOT need things such as: instant messengers, bittorrent clients, iTunes, RealPlayer, Google, Adobe, cameras, printers, scanners, etc. These can be loaded on an as-needed basis.
