To restore IE to previous version, go into Control Panel > Add & Remove Programs, look for Windows Internet Explorer, uninstall it. Previous version will automatically be restored.

I just want you to be aware that if Internet Explorer was upgraded PRIOR to installing Windows XP Service Pack 3, there is no going back! You can only downgrade if IE was upgraded AFTER the service pack was applied.

See here: You cannot uninstall Internet Explorer 7 or Internet Explorer 8 after you install Windows XP Service Pack 3
