To see resently installed Updates - Start - Control Panel -
Windows Updates - On the lower left corner click on - '
Installed Updates.
These updates have dates when they were installed. You
could Uninstall all updates for the Date in question.
You right click and left click Uninstall.
If this doesn't help you can reinstall Windows Mail or
Install Windows Live Mail which is a newer version of
Windows Mail. Your mail should start loading into the new
version.
I have AOL email and it loads into Windows Live Mail when I
open Windows Live Mail.

Did you upgrade from a Vista install to Win 7? The native install of Win 7 should be using Live Mail, not Windows Mail.

Since you are now using Win 7 and if your install was an upgrade the updates most likely changed the system to use the newer mail program. Removing the update will probably not change the system back to Windows Mail.
