Specs: Windows 7
How do you use the tools to install default
email? how do you know what steps to take installing? Please assist me to install this?
I need this for surveys, etc. How do I do this ?

Could you be more specific, which mail client are you wanting to use, Windows live mail, Outlook, a gmail account?

Default email is what you are asked for if you try to email a link directly from your browser. It simply means that you have an email client program installed on your system and Windows recognizes this as the default for all emails it initiates through similar requests. This means that if you want to use these features then you will have to install an email program like Outlook, Thunderbird, Live Mail, etc. If you typically use a web based email then these features will not work. I use Thunderbird which is a free download from Mozilla. You simply install it then set up your email information on it and it will begin downloading and handling your email. Once it is recognized as your default email client in windows, windows can then open it when you initiate anything email related. I hope that this helps you understand it a bit better. Gmail and many similar web based emails do not work this way.
