Share user folders with other users

Specs: Windows 2008 R2, 2.4ghz/4gb
First off I must state that I am new to Server 2008 and any server OS for that matter. I have installed Server 2008, and set up a few users so far with roaming profiles. What I cannot yet figure out how to set up is how to share each users files with other users. For example… I am upgrading from the basic P2P (non-Server) network, and I liked how in "My Network Places" I was able to view all shared documents/folders on other computers. How do I set up my systems now with a server to view and browse shares similar to like I did before without one? I understand that this would probably be where a public folder/share would come in place, but each users files are pretty much user specific, with only a few exceptions where other users would need to view them.

This also brings up a second question... What is the proper procedure for setting up a public share on the server, and what is the traditional way to access that share from the client machines (by mapping network drive, viewing in My Network Places, other?)?

The idea of "users" folder is that others can't view them. You can still create a folder or a logical drive with permissions for the "everyone" group.
