Server2008 + W7: Synchronising large profiles

Specs: Server 2008/Windows 7, Phenom II/ 8+GB
Windows Server 2008 back end. Windows 7 on client computers. We've got Folder Redirection enabled for Documents, Picutres, Music, Start Menu and Desktop. I've been using a desktop PC for a while. I've got several VM's on it and tons of scanned documents so my profile is around 20GB. I've just been assigned a laptop in addition to my desktop. I need the VM's to be on both computers. Clearly, profile redirection isn't going to work for the laptop when I don't have a path to the server my profile is on at login. A roaming profile isn't the answer either as logging in takes literally 6 hours when I'm on the company network. An external drive is not an option as it is a violation of our security policy and I'm not willing to make an exception for myself.
What other options do I have?

Does your security policy allow for the _encrypted_ external drives? (If not, it should!)
Software such as our USBCrypt should protect the external drive just fine.

USB storage devices of any type are currently prohibited. EFS is easily cracked using any number of publicly available rainbow tables and we don't have BitLocker (Windows 7 Professional and Windows Server 2008 "R1")--though I fail to see how it would be useful as the only people that would have a need for it are our mobile users and they already have all of their data and there is nothing we can do about that security risk with the tools we have available.

As it stands now, I've slimmed down my user profile to 10.4GB by resizing virtual disks and getting rid of unnessary files. I've opted to try the roaming profile.

My workstation is downloading at around 512Kb/s and is currently unaware of the changes I've made on my notebook while in the server room. I connected my notebook directly to a core switch and had my profile up in a little over 30 seconds. Started the login on my workstatoin at 2pm on Friday the 27th. It is now after 7pm on Saturday the 28th and I just stopped by work--still loggin in.

Roaming profile isn't working anyway on my notebook because the user profile service is looking for the server copy of my profile. I need to see what's going on with this--I suspect Offline files has been disabled. It's been ages since I've touch our group policies.

Any suggestions related to the profile issue are welcome.
