I have a Windows SBS 2011 Server. When I type mail.mydomain.com I would like it to point to the OWA. I have already created the sub domain and have it pointed to the server. But I'm not sure how to tell IIS to point that address to OWA.

Note: I would like to do this with a couple different applications besides OWA

You would use DNS not IIS.
mail is not a subdomain
you should also be using https

We do it via their browsers home page via GPO. If accessing remotely we do it via a company web page and link to mail.
