When you are running Active Directory the Administrator is a Domain account (there may be several). When you demote the server it reverts to the local Administrator account that you created when you installed the OS. When you reinstall AD, if it is the first DC in a Forest it will ask you for a password for the Domain Administrator account. You can only use the local Administrator account when you are in AD Restore mode.

When you install AD on a server in an existing domain, all local accounts are deleted. It only uses domain accounts from that point on. If you need to log in as that local users to access something under its profile, first I would recommend that you just open the profile folder under C:\users and find what you're looking for. You could also copy the profile to another user using the advanced tab of the system properties.
