How do I change the default gateway on SBS?

Specs: Windows server 2003, n/a
Does anyone know how I can change the default gateway on an SBS server rather than having to do it on each of the individual machines?

All machines are configured for automatic IPs which are assigned by DHCP running on the SBS server.

Can I change this on an existing scope rather than create a new one?

I've tried editing the config.dat by changing the default gateway in there but this has fialed to work as the client machines are still picking up the old default gateway.

what was the gateway ip before and what is it now?

This will determine if you need to setup a new dhcp scope or just edit the existing one.
