Solved how to edit text of a .jpg file

Specs: Windows 10
I scanned a book to laptop and they came across as jpg files. I can't edit the pages. I am trying to digitize a hard cover book for family to add to and for us to be able to update existing info on pages that need them.

Most scanner software includes Optical Character Reading (OCR). The best bet is to use that rather than normal picture (jpg) scan but mostly you can run OCR afterwards. This can convert the text in a jpg to normal text in, for example, Word files. It can then be edited in the normal way

I can't be more definite because there is no information on what scanner package is in use and they vary widely.

If need be there are OCR freebie downloads but take the usual care to ensure there are no pre-checked goodies that you don't want/need. These might be of interest but I can't vouch for them personally:

You cannot edit text in a jpg file persay, jpegs are pictures and unless you have picture editing software such as Adobe Photoshop you can't. Even with photo editing software, this would not be the best way to store and edit your books. And saving a whole books worth of pages in a photo format would be a huge amount of data.

A better way to store a digitized copy would be to save it as a Word file as Derek suggested or an editable PDF file. The file sizes of PDF's compared to JPG's would be much smaller and PDF's can be edited easily with the right software.
