Forget the question about whether or not mobile-phone based payments will continue to accelerate - it's already gaining acceptance by more people with varying preference. HERE is a infographic comparison of the difference between Apple Pay, Samsung Pay, Google Wallet, PayPal, and Bitcoin.

Sadly - in-spite of assurances about the security of these systems by the various promoters/pushers for them... - increasingly banks and credit card companies are forcing them on users. I prefer "not" to use them. But try getting a card that doesn't have the option built-in as default. It takes quite a lot persuasion - and not always willing given by the companies involved. Near field communications is really not entirely secure... and has been hacked already.

Inevitably those who choose not use these systems, and there are many out there of various ages/generations who prefer not to - they will be penalised in favour of those who do accept/use them. Much like those who are not online (and thus don't manage their accounts that way) and are charged more for a gas, electricity, water, phone services etc. (at least in the UK).
