Output a variable without spaces around it?

Specs: Mac OS X 10.6.6
When I output a variable to a text file, I have to put spaces around it.
I would like to not have spaces around the outputted variable.
Is there a way to do that?

I output to a java launcher, and the variable (RAM) is the ram amount.
The output code:
echo "cd ~/Desktop/Bukkit\ Server
java -Xincgc -Xmx $RAM M -jar CraftBukkit.jar" >LaunchServer.command

@echo %VARIABLE% > textfile.txt

But if the variable self contains spaces around it, you have to pull that out.
