remove automatic date documents

Specs: Windows 7
I was using XP and just got new computer with windows 7 and office 2010. Every time that I open an existing document that had a date put in it, it changes to today's date. How can this be disabled?

How did the date get "put in it"?

If the cell contains either the TODAY() or NOW() function, it will get updated regardless of the OS or version of EXCEL, at least since Excel 2000.
