Outlook OST file bkup missing a folder that I deleted today

Specs: Windows 7, i-5 3570 3.4 ghz
I inadvertently deleted a folder in outlook 2013. I had backups of my .ost file from 10 days ago and 2 months ago. I moved the ost file, that I deleted the folder from, to another directory and copied the Nov 3 OST file from my backup mybook drive to outlook's directory. To my surprise the folder did not show up! I then went to a passport backup from Sept 10 - over 2 months ago - and again the folder did not show up! I know the folder was deleted today because I was looking at some files in it. The only thing I can figure is that the server keeps track of my folders.

I didn't have any recover deleted items on my toolbar. I now have both that are available in the options menus - 'Recover deleted items' and 'Recover deleted items from server'. I experimented with this and no matter what I do both of those choices are grey'ed out so recovery doesn't seem likely to work in the future.

Why not just have your Exchange Admin restore the folder?

Doing the best I can here... And remember, there's always more than one path to success. :)

This is my home outlook. I am the admin and I had multiple backups and everyone that I started outlook with was missing the folder!!! It is as though the server knows that the folder was deleted so it doesn't show it.

And if I want to open a 'data' file it only allows you to open a .pst file. This is an .ost file.
