Specs: Windows 10
What the heck. I went to open my documents which were all all written and stored as wordpad documents and now I find they have all changed to open office documents. I didn't do that. How can I change them back?

"I didn't do that"

Did you just install Open Office? If you did, then you did do that.

"How can I change them back?"

Right click on one of the wordpad docs > Properties > Change.

The documents did not change.

Only the file association for the filetype changed.

Only the file association needs to be changed back to
fix the problem for all of the files simultaneously.

On the other hand, changing your default program from
Wordpad to Open Office Writer could be a significant
step up.
