Specs: Windows 7
Working with Excel 2007, I am trying to assign a value of 2 to a cell. For instance. If I enter a 1 or 2 or so on into A1 I would like for the cell to multiply any entry by 2.

You can't have a formula in a cell and be able to enter a value into it at the same time.

The only way to accomplish your goal is with a Macro.

With 17,179,869,184 cells available in a Excel 2007 worksheet, why do you feel the need to use a single cell for both user entry and a calculation?

I am using to count totals for points. 2 rows will be used for 2 points, 2 for 3, 2 for 4 and 1 for 5.
