Using Mac OSX 10.11.6. The printer will print anything in color or black from Epson test pages or prompts, but will not print PDF forms, docs or email text. Have downloaded and installed updated drivers and have done the uninstall/ reinstall thing.
Try printing same PDF & Word documents on a Windows PC if possible, to see if it's a Macintosh-only problem (which I suspect it is). If there are are no similar printing problems on a Windows PC, contact Apple technical support.

Does it produce totally blank pages when you try to print documents etc.? Any error messages/error codes in the printer job list box (for want of name...) - if like Canon printers your Epson opens one when there are jobs beng processed?
Have you checked that you haven't set to print to file or similar from wherever?
Completely blank pages are issued when printing docs or text in general, except when printing Epson tests or “Congratulations! Your Epson printer is working perfectly!” messages.
Not knowing the printer in question, I've been using Canon for ages... Epson have a reputation for questionable ink replacements - in that often the cartridges often appear to say they're out of ink or running low and must be replaced... when in truth there is still a lot in them... And Epson replacements aren't cheap... Does the printer allow a choice of black/white or colour printing?
Can you select to print only in black and white; and equally in colour; or is whatever by default?
Does the test etc. print come out in colour only.
Back to doc printing... have you tried to create a document with colour content included; which might be both text (in various colours) and even a simple design composed of several coloured shapes?
If your Epson allows selecton of black and white or colour - try the test using both options in turn.
Incidentally which version of Word (presumably from MS-Office for Mac) are you using?
Doesn’t matter what word processor program I use. MS Office apps don’t fare any better than off-brands. Scan and copy functions are okay. Photo printing is excellent. Don’t have a Windows pc to test.
But are there options re' printing within the print window/dialogue area which opens up when you select to print (anything - be it photos or whatever)? And if so what are they and have you checked them to see what might be influencing? Also what happens if you print via a usb connection?
