That used to be true.

From the iPhone 3GS onwards Apple introduced encryption into the operating system if a passcode was used to lock the device.

To retrieve old user data on a more modern iOS device they would need to retrieve it first, which isn't as easy as it used to be, then decrypt it.

Restoring the device as a new device should be enough to prevent any unwanted snooping if the device is passed on. The data might be accessible to law enforcement or other government agencies that have the tech, skill and willingness to do so but for the average person it wouldn't be worth the effort.

Apple do take your data security seriously, however this article is more up to date and comprehensive:

✔ Best Answer
The best way is to overwrite the device with random disk, then erase it with iTunes or iCloud. However, you can't erase the device if it was jailbroken with 'Erase All Content and Settings' option. Here is the recommended way to wipe an iPhone before selling: http://www.safewiper.com/tutorials/...

The phone is encrypted.

Hook up to computer and connect to iTunes. Erase all contents and settings. Set it up as a new iPhone. Don't restore it from a backup.

Give it to your geekiest mate to try to extract any of the old data if you are unsure.

But the safest way of all of not having data retrieved is to use riiders method, then burn it afterwards and have the ashes a sprinkled out to sea.

Basically there is no failsafe but the method Apple provides is quite good.

You can have a try this to deleted data on your old iphone . Tap “Settings” -> “General” -> “Reset”. Select “Erase All Content and Settings” and tap “Erase iPhone” to confirm. Although, you can deleted data. But in fact, this way doesn't permanently erase iPhone data. When you use some data recovery tool, you can recover deleted data easily. So you need one powerful tool to permanently erase data from iPhone without restoring.
