To erase everything that is on it just go to Settings>General>Reset and then look for Erase all content and settings.

To remove the SIM card - there is a little slot on the top of the iPhone 3GS where the SIM card goes. Take a small paper clip and push it into the hole in the tray and the tray should pop right out.

As far as selling the device goes, make sure the IMEI on the device isn't blacklisted with the original carrier (more than likely AT&T with the iPhone 3GS). To do this you can call customer service and have them check the IMEI number. The IMEI number can be found in Settings>General>About. If it's not blacklisted then you can list it as-is, just make sure you describe any flaws it may have in detail. If it is blacklisted, you can still sell it, but you have to sell it for parts and make sure you explain that it cannot be used on the original network.
