What cartridge is the error message about? Black or color?

If the error is about the color cartridge, printed black (text) is still possible.
Color prints can show missing/faint color. The color cartridge contains 4 colors, so one color low is enough to trigger an "out of ink" alarm.

My HP printer now shows black ink low error, but I can still print good quality text. Maybe next print will show up faint or missing black ink.

You can wait till the ink is completely depleted or change ahead and don't risk to start printing a 20 page document and conclude the ink is indeed finished....

This may be rare, but I had a printer once that got some ink on the electrical contacts between the cartridge and the printer so it was incorrectly reading the ink levels. I was able to correct this by removing the cartridge and cleaning the contacts both on the cartridge and on the printer with rubbing alcohol and Q-Tips. Make sure you do not leave behind lint. Make sure you do not make a mess with the ink when handling them. Worth trying. I even had an old Epson printer that did not use contacts on the cartridge so if I removed the ink and put it back, the printer thought it was fresh ink with full levels so it would print for a couple more days before it started printing bad. Worth trying anyway.

You have to be a little bit crazy to keep you from going insane.
