New fan controllers and some motherboards come with TC's or RTD sensors that can be placed in many locations on the board. Tc is a welded joint of dissimilar metals that generates a voltage at that junction and their output changes based on temperature.
Where to place these? where you think it is hottest or where you curious about what the temp is

If you bought a fan controller system, it would help to post the make/model. The instructions generally recommend locations for the sensors. Between the CPU & heatsink would one place. Other possibilities are the motherboard chipset, GPU, RAM, & HDD.

If the objective is to make the fan as effective as possible at
keeping the temperture down while minimizing the time it spends
running at higher speed, I'd suggest putting the sensor wherever
the temperature begins to increase the earliest. That is, the
sooner the sensor detects excessive temperature, the sooner
the fan will ramp up, and the shorter the time it should have to
operate at the higher speed.
