I'm wanting to install XP at home and be able to "hide" certain folders and programs from my children. Can I set the security so that based on the logged in user, they can only see and execute certain programs and files with XP Home? Or do I need to install XP Pro to be able to do this?
I currently boot to two different partitions to be able to keep my work and home files and programs separate but would like to consolidate these if I can.

I use Pro and not sure about home edition.

File and folder level security is an integrated feature of XP Pro, providing that you install the OS using NTFS instead of FAT32. If you've already installed it, you can convert the drive to NTFS by typing the following from a command prompt:
[ CONVERT C:\ FS:NTFS ]
The system can't convert it until you reboot but it will be converted on the next restart. Then you can set permissions on individual files and folders by simply right clicking on them, selecting Security and Sharing, and setting the appropriate permissions.
XP Home also has good security features but if you want the most secure and functional, go with XP Pro.
