When the right pane of Windows Explorer is right clicked on a file, I would like to have the option to open any file in a particular program. Can this be done, if so how?

Try rt clicking the file, and go to Open With... (sorry, I'm not sure if this answers your questuon the way you wanted)

Thanks for reply... however I only get Open With if the file extn is recognised by XP..I would like to specify open file with other extns.

Heres how you do it, Go to control panel=> folder options=>file types. Find yous extension and assign the appropiate program to that file extension, done, you can also assign icons I think.
