I need some kind of program that will let me chat with someone else across country (that I know, a friend) and record the conversation with a somewhat high quality so I can put the conversation on a podcast later.

It's hard working with voice actors over the phone and my hope is that doing via computer mic will allow for better quality audio.

You can do that with Skype, I do not know what the quality is like though.

I know Teamspeak allows you to record. But, you would need to find a server to use. The quality would depend on the codec used on the Teamspeak server. But, for a solution that might be easier to setup (Teamspeak requires a client installation on your computers) you might look into Messenger. It allows voice conversations, but I don't know if it allows recording.

MP3 Audio Sound Recorder can record any/all audio processed by your system.

Simply put: If you can hear it through your speakers, MP3 Audio Sound Recorder can record it.
