Okay, I installed a $20k CAD/CAM program at my business, and want to keep employees from copying this program. I know that there are certain programs that can log where files are copied and such, which might make it possible to piece together where things went (and copy all of the files applicable to a certain program). If there aren't any of these 'loggers' on the system, is there a way to copy this program, maybe by viewing some Windows system log...?

In my experience, these programs usually have some sort of protection, either hardware dongle or are bound to the mac address of the network card of the PC it is installed on and a telephone call is required to activate the product.
As far as I am aware XP "out of the box" will not provide this information.
Simply copying the installation files once it is installed probably won't do anyone any good as the installation will often write registery entries also to make it work which are tied to the individual PC it was installed on.
