Lately, after I have already opened Outlook, but I click on the 'show desktop' icon to the left of the Start button, Outlook is turned off but the reminders pane stays open. What gives?

What do you mean it's turned off? Does the icon leave the taskbar? Clicking on the Show Desktop won't close any programs that are open. It will only minimize them. If you right-click on the Outlook icon in the system tray, is your "Hide when minimized" option checked?
Just an FYI, there is an Office Forum for questions related to Office or software.
