Hello! I'm using Windows XP Pro Greek. What will happen if I install SP 1 or 2 of Windows XP Pro English?

Nothing bad should happen. A service pack is just a bunch of security updates from Microsoft to keep your computer up to date. Downloading and installing these won't change your language settings if thats what you mean.

Take care
