I have an old REVEAL Midi keyboard I'd like to connect to my VAIO computer that has no serial port. I found a serial to USB adapter cable for use with a joystick. Is there a decent chance this would work to connect the keyboard?

first thing first you must be talking about your game/midi port thats where joysticks go (15 pin two rows)(serial ports are 9 pin 2 row) if this is the a case i'd say YES

It might not work.
I bought a PS/2 mouse that came with a PS/2-to-serial adapter. However, the adapter only works with that particular mouse :-(
Just my experience

Yes, sorry - actually what the cable has a 5-pin DIN for the keyboard and the other end is a 'passthru' type DB15 which was used for my old serial modem connection on an older machine.
