I use a TV card lifeview flytv which takes RF, composite and svideo in (sound is via the sound card), I use composite in (the phono plug things) as my video player doesn't have svideo out.

You simply run cables from the back of the video player into your tv or capture card

You then need capturing software - some came with the card, I didn't like it so tried Nero and didn't like that but settled on the wonderfull virtualdub which I find very good and syncing sound to vision

After being captured as an .avi (make sure you have enough disk space!) I then use nero vision express 3 to turn it into a DVD and add titles / chapters etc.

This set up works very well for me, my only gripe is that I can only capture at 320x240
