I've just reinstalled XP Pro SP1 and as yet have put no software on but a folder has appeared called C:\Inetpub. It contains four other folders AdminScripts - iissamples - Scripts - wwwroot. Does anybody know what this is? I've a tripple boot into Win ME and 2 XP Pro's so it could have been installed by some software on my other partition.

You have installed Microsoft IIS (Internet Information Services) which is included with XP Pro. If you have no plans to use your PC as a web server, you can go to Control Panel, Add/Remove Programs, click the Add/Remove Windows Components, and de-select IIS. That will remove it.
