if you use MSN 6 http://messenger.msn.com it can save your conversation automatically. If you don't like the idea of that, which i don't because as far as i know you cant password protect you convo's to keep prying eyes out, then use Messenger Plus 2! http://www.msgplus.net/
Failing both of thses ideas, when you finished a conversation, in the chat box your in, click on File > Save :)
