Hi Heroes,
I've stored a whole load of emails in my Personal Folders to save space on the Exchange Server. I need to back them up but don't know where they are stored.
I don't want to use Microsofts back up tool because it seems to save the kitchen sink and I can't just do an individual restore of that file.

I don't use Outlook, but how about a search for *.PST?
Outlook questions should really be posted the the Office Software forum.

mmm - as in reply/post 4 above... a simple search for files and folders (Start\search etc...) will bring "all" locations of .pst folder(s)

The filename is by default Outlook.pst. With Outlook open, right-click on your Personal Folder and select Properties, then Advanced. That will tell you the location of your pst file.
Another way to find it is Control Panel, Mail, Data files.
Also, Microsoft's pfbackup is exactly what you want to use to backup your pst files.
