Dear friend,
You can only uninstall SP1 from ADD/REMOVE programs if at the time of installing the Service pack you had chosen to archive the old files; if you haven't chosen to archive the old files them I am soory to say that possibly there is no other way that you can remove SP1.

You can boot from the XP CD and do a repair from the install screen {not recovery console}. That will reinstall XP without the SP and updates. Rgds.
