I am adding another hard drive to my system and want to make a back up CD of my hard drive. How do I do this? I have Roxio easy cd creator platnum, and exactly what files do I want to copy? All of them or just certain files? Will a dvd disc allow me to record data from a cdr-w drive If I need to have that much disc space.

Do yourself a favour and get Norton Ghost, it will span images to CDs and is the best backup program I have used..
You say you are getting another hard drive? Does that mean you will have 2 ?? in which case you can take weekly copies of the whole OS and store on seperate drive for 'crash insurance'.. That is what I would do and have done, and I am duel booted as well.
Ghost has saved my ass so many times due to bad software downloads it's worth the couple of dollars to be able to recover your system in 20 minits..Just my suggestion.... but best thing since sliced bread ..

You can't use Roxio for a backup because it will not copy the boot sector so that even if you did copy the information to a new drive it would not boot up.
Do as jimbob suggests and invest in a copy of Ghost 2002 or 2003. It will do a complete backup on CD-R or RW and span the disks automatically. Or, as he suggests copy the backup to another partition.
