Is there a way to find a hidden text in a graphic file such as jpg or ps?

Depends. You can open the file with any word processor and do a search if you know the word. Now under normal chance you might have a word show up even though it has nothing to do with a word. Just a chance of numbers.
If you don't know the word then to prove it is an actual word is much more complex. You would have to understand the format of the file and reverse it to see. There might even be some free programs that search files. Neat way to send a note to your sweety so her dad doesn't know I'd guess.
