I was wondering how do you get the turn off computer screen so that it shows Hibernate & Standby in 2 seperate buttons instead of having to hold down shift to get hibernate to appear?

In the User Account Applet in the Control Panel go to 'Change the way User log on and logg off' Select Logon & Logoff option, and untick 'Use the Welcome Screen'. You'll get a dialogue box offering Shutdown, Hibernate Standby, etc.

I have XP Pro as well. Surely you have the User Accounts icon in the Control Panel? It should all be in there. What have you got? Check it out (and let me know-I'm curious!)
