folder privacy in XP pro

I installed XP pro last night, and I really like it so far. But I have one question, how do I make it so only I can access my documents and settings? When I logged in as guest, to test it, I could still access the admin's documents and settings. When I right click on the folder and go to the sharing tab, the option to make it private is greyed out. So how do I make a folder only visable by one user(and the admin of course).
XP must be instaled using an ntfs partition to take advantage of the file locking feature. The greyed out thing makes me think you are using FAT32
