file type associations

Hi There are many file types on our computers that should not be associated with specific applications. For example: All of mine .bin´s are associated with STUFFIT and all of mine .dat´s are associated with NeroMedia player. Although not a real problem but an annoyance. Can I unassociate these and keep the extensions or do I have to remove these extensions from the FILE TYPES in the FOLDER OPTIONS?
My opinion is that opening some types of files with an undesired program does not affect how that file is used by Windows or other applications, association would be just for viewing purposes. For example if you open a driver file with Notepad, it would not change the functionality of that file.
I may be wrong. So watch for help from others.
