What would be the easiest method of coverting 8mm and Hi8 movies from my video camera to CD's on my computer. I have xp movie maker, Roxio Easy Media Creator 7, Nero 5.5 and ACDSee. I would appreciate any advice.

To start with you need a video input adapter. There are cards and USB adapters with audio/video jacks that your camera can probably connect to. They sometimes come with the software needed to record. However, you might want to pay for more sophisticated software with more options. I use PowerVCR for recording to the hard drive and Ulead DVD Movie Factory for creating DVDs.

I use ConvertX from Plextor ($150) and you can record in many different formats including direct from tape to DVD. Very simple to use.

I have used both pc card and usb capture devices. As for the clairity of the captured signal IMHO the pc card was hands down the winner. You can use Windows Media Encoder 9 to customise how it's captured and also the output format and watch both sides of the process on one screen at the same time. Or you can as was suggested go spend more than you have to to get high end outboard capture devices and tricky software that's hard to learn. Movie Maker 2.1 is a free download from MS as is Media Encoder 9. But that's my take on it...
