Some hints, not full answers.
Yes, you can. Two video cards or one video card with two outputs (called a dual head). A lot depends on the programs, they have to be two monitor friendly. Don't know about wireless.

milesnuk, I've got three monitors working from the 'on board' monitor output and two PCI video cards, been doing this since Win98.
Works great, (and always has) best 'extra' I've ever had for any computer system.
