When I burn large files to the CD, they start copying and halfway through, the copying message still appears on the screen but the CD stops recording (I have tried 2 different burners with the same results). When I go to shutdown, it tells me that a copy is still in progress. HELP!!!

Have you downloaded the latest drivers or even tried to find newer firmware for the CDR. I had a simmilar problem once with a sony CDR. I flashed the firmware and it was gone. And im still burning happely ever after.

Does this only happen when you are copying certain CDs? Some games CDs are protected (rightly so), and the illegal copying of them will result in the syptoms you describe.
