What exactly is a .BAK file? All I know is that it is created for backups. Is it a kind of compilation of all the files you choose to backup? Is it zipped? Also, what program creates these (I assume the default Windows backup program does)?

a bak extension is a generic backup file. Any program can create them and the format is whatever the creating program makes it. Windows makes them along with many other applications.

.bak files can be restored to their original state by renaming the file extension.
