Backup programs

Hi everybody.
After doing a BIG upgrade to my system, I decided to get a second HD for backup only, because using CDs for this task is a hassle to me. I'm working with Powerquest's DataKeeper and I like it a lot because it monitors every new file in the selected partitions and adds it automatically to the backup. The only thing I dislike is that it only works when adding files, but not when deleting them. I'd like to find a good backup program which monitors EVERY change in my drive: Adding and deleting files. Is there something like that? Thank you very much in advance.
Mmm... the thing is: I see that these programs list the files and changes, but no real backup of them. They only work as kinda "info log", as far as I've seen, but no way of recovering in case of a disaster. I'll keep looking, but I can't see this option.
