Why is it that some of my programs in the Add & Remove panel show the size of the program on the righthand side and others do not show anything ?

Good Question! I think it depends on the installer.
I also wonder how Windows determines how frequently I use the program. Because some programs I run all the time are listed as "rarely used" whereas others I hardly touch are listed as "occassionally"

I've pretty much decided that Add/Remove is only good for Add/Remove. I have the same use problems as CyberSlug, as well as "date last used", where programs I run almost daily show as last run over a month ago.
