The other day I hooked my laptop to my LCD TV via a VGA cable. The laptop prompted me to choose whether I wanted to have the display on both screens or just one, not really thinking I chose just the TV and now I can't get it back to both?

Try pressing the an Fn key & system key at the same time, it should actuate an action identified by the green text or icon on the *pressed* key.
According to Gateway, there should be a toggle key for switching between the LCD, an external monitor, or both displays at the same time .... probably F3.
Try Fn+F3.
