Scan the pages to your computer requires a software called OCR (Optical Character Recognition). This allows the transfer from printed text to regular text on your computer.
Even though some OCR software are very good, mistakes can still happen. I'd look through all the text and make sure there are no errors in spelling.
Once this is done, you'll need some sort of narrator just like the one that comes with Microsoft like you mentioned. This can be done but, you mentioned having a male and a female reading. This could be tricky but possible. What I would do it have a sound recorder and record the male's voice at one sentence/paragraph/chapter, pause the recording, change the voice to female and resume the recording.
Once this is done, you'll just need to save it all and give it to him by means of CD or through some Mp3 player.
Now..depending how long the book is, is there an option to have your or someone else just read it out loud while being recorded?
