Hi! I recently switch to vista, its awesome (so far) but occasionally my CPU usage will go really high, like bounce between 30%-60% while idling, usually when i first turn it on. I installed all the latest driver for my Mobo and videocard. Even when I open Firefox the usage will jump to 10% or so, in my opinion that seems really high just to open firefox, in XP my usage wouldn't even just. I'm running and C2D @ 2.33GHz and 4 gigs of ram.
Often disk indexing could be the culprit for sudden high cpu spikes even when PC is at idling.
If indexing is not a must for you, open Computer, right-click the hard disk ( or system partition where Windows is installed ) and click Properties. Then uncheck Allow Indexing for this drive ( or similar wording ) down the Properties window. You can always check back if this does not cure your concerns.
Furthermore, if you want XP-style behavior from Vista, you can also turn off Vista Aero's tranparency by opening Display Properties and further digging each property on the Display Properties window.

It indexes some file types such as .doc, etc. to later find them when you search for one of them.

very hard to tell. i had a similar issue to yours...my solution? i got crazy, believe me, really crazy to find out what it was. in the end i had to reinstall the whole OS and it just disappered. i install OS ...let's say 10 or 15 times a month and i can tell you that everynow and then after a fresh install the system just behaves in the way you described it...mmm... try to make a system resore and revert your OS to a previous state. maybe you installed something your vista doesnt like. another thing you could do is to degrag your hd. one last thing, try to open task manager and see if anything sucks a lot of resources all of a sudden
