Specs: Windows Vista Home Premium 64 bit
I do not have any APPDATA files

First Adobe corrupted, so I uninstalled it and tried to reinstall but error 'no %APPDATA%' file

Same happened with Java, asked to install update, then to uninstall first - 'no %APPDATA% file'

Have unchecked hidden folders

AppData refers to a folder, not a file (the % symbols are not part of the folder-name, they are just generic path identifiers).

I'd be very surprised if it doesn't exist as most applications rely on it & install files in it, not just Adobe & Java.

It's located here on Vista & Win7:

It is visible when "show hidden files" is enabled.

I don't know if 64-bit Windows is any different though in that repect as mine is 32-bit.
