How would I setup a system that would check what version of anti-virus a user is using (upon login) and auto-update if out-of-date?

McAfee (Network Associates) has this built in.

You can schedule updates by the hour, day or week. This is for both server and workstation.

All respectable Virusscanners will do this
in their own schedular

u can write a batch file and put into login scrpits ..
