Is there a way to unformat a hardisk with windows nt.

Nope I'm afraid that you have lost all of what was on that disk, even with quick format, the file allocation table is wiped, so that although the data is still there, the machine cant determine where one file stops and another starts.

All gone!

Not necessarily. There is a product by I believe by Power Quest called Lost and Found. They claim to be able to recover data from any drive.

Also if there is critical data on it thenyou might check out some data recovery service. $$$$ but if you have to you have to...

There is also a program from On Track Data called Tiramisu. I have used it on an Fdisked and formatted drive and was able to retrieve data.
As long as the drive hasn't been written to after the format you can still retrieve your old data.
